Vegan, Whole Food Plant Based, Gluten free option
Ingredients for the dough:
100 g almond flour
150 g wholemeal flour (or brown rice flour if you wish gluten free version)
1 tablespoon date syrup (or mixture of 1 date and water)
Half of teaspoon bicarbonate of soda
Apple puree (mixture of 1 apple and 50 g water)
Ingredients for the filling:
1 pealed and chopped apple
800 g ripped and pitted plum
2-3 tablespoon date syrup
1 teaspoon ground cinnamon
0,5 teaspoon ground clove
Half a handful of rye- or oat flakes (for the crisp on the top of the pie)
Instructions:
Combine all of the ingredients for the dough. Then gently work the dough into a ball.
Sprinkle the table where you work with a little flour. Roll out the pie dough into a nice circular shape. Try to make it a little bigger than your pie dish for the edge of the pie. Gently place the rolled out dough onto a pie plate.
Chop the apple and plums, then add the rest of the filling ingredients.
Preheat the oven to 180 C.
Place the dough in the pie dish, then pour the filling over it. Sprinkle it all with the rye- or oat flakes.
Bake it in the center of the oven for 35-40 minutes until the top of the pie starts to get crispy and the fruit is bubbly.
